Why do you think it needs ribbing on the ends? That will make the ends pull in narrower than the rest of the scarf. If that’s what you want, 2x2 rib is my favourite. Also, are you planning to do this scarf in colorwork *and* moss stitch? Are you planning sections of moss stitch and sections of some kind of colourwork? Because changing colours in moss, even just for stripes, isn’t going to give you a ‘clean’ colour change. If you change colours on a row that has both knit and purled stitches, which every row of moss stitch has, you get ‘blips’ of the previous colour in the new one rather than a clear division between colours. That might look fine to you, I just wanted to mention it so you don’t have to post later wondering if you’re changing colours wrong:)

Lots of stitches would look good near moss, but will also look strange if you change colours within them. Are you set on moss stitch *and* colourwork? My suggestion would be to choose the form of colourwork that interests you and do the whole scarf in that, maybe mosaic? Or do the whole scarf in moss stitch in a single colour.

Mosaic is not done in moss stitch. That’s what I’m saying, that you should choose colorwork OR moss stitch. Mosaic looks mostly like garter or stockinette with slip stitch designs, for a scarf I would recommend the garter version as stockinette will curl. Why not do a seed stitch border with a moss stitch main area? No risk of the fabric drawing in at the edges, but a slight pattern difference that can be seen.

I think you have a good idea with the scrap yarn. I try things out with scrap yarn all the time, I just consider it practice.
